Looking for Ipod Guru's

So I just bought 2 used ipods from the local kijiji.
One of them is the brand new 80gb ipod video and the other is the the previous generation 30gb.

I have 2 questions/problems.

1.) the 80gb is formatted to a mac. To use it on my windows computer I have to "restore" the ipod. That means getting rid of all the data on it already. The thing is I want to keep some of whats on there already and add some stuff from my computer. How do I do that?

2.)My second problem is similar to the first. I pretty much want to sort through everything on the ipod and get rid of some of the data on it.

Is there any sort of software taht can extract all the data from these ipods then save it onto my computer? And from there I can delete some of the stuff I dont want?

Im not the best with this whole Ipod thing. Any help is appreciated.

iDump or copypod can both take whatever is off of your ipod and put it whereever you want.
